Its a toggle via the order processing step to turn on Late fees and host fees.
Late fees are added to an order if the date of the order is after the last order date as set on the workflow page.
Host fees can be added by facility type and day of week and if event occurs on a public holiday.
We use the published Australian public holiday calendar to automate this calculation.
